Rainbow couscous is a blended balance of spinach and tomato flavoured couscous. Couscous is used in place of rice, as a side salad, added to soups, mixed with sauteed vegetables and as a breakfast cereal.
Serve couscous with marinated or broiled vegetables, or flavour with garlic and onion as a side dish to meat and poultry. Use a bed of couscous instead of rice with curries or stir fry meals.
Couscous does not need to be rinsed and only requires steeping. Boil 3/4 cup broth or water, remove from heat and add 1/2 cup couscous. Place lid on pot and let stand for 3 minutes. Fluff with fork and serve. Yields 1.5 cups.
